Earlier in his career, Perez was Tampa District Manager for the Florida Department of Business and Professional Regulation’s Division of Hotels and Restaurants.  He was responsible for regulating 15,000+ foodservice and lodging establishments, including inspecting Super Bowl XLIII, the 2008 MLB World Series, and the 2004 NHL Stanley Cup Finals in Tampa Bay. He led the 2012 Republican National Convention's Food Safety Incident Management Team, monitoring delivery of 223,914 meals for events and first responders.

Perez is Vice President for the Hispanic Chamber of Commerce of Polk County, FL, and member of City of Lakeland’s Mayor’s Hispanic Advisory Council. A SCORE mentor, specializing in regulatory, licensing, and compliance issues within the hospitality industry, providing research, training, and consulting services to small businesses, he partners with educational institutions and publishers to develop and design curriculum and learning materials.

“Christ is the center of my life,” he explains. “I accepted Him early on and immediately was filled with God’s Spirit. Being young, I thought I knew all the answers and was lured away by the secular world. I sensed God’s presence and felt Him nudging me. 1 Peter 5:8 says, ‘Be sober, be vigilant; because the devil walks like a roaring lion, seeking whom he may devour.’ God placed a very close Christian friend into my life who led me back into the arms of the Lord. Like Christ, this person never turned her back on me because she had faith. I thank God for her teaching and His hand in our lives because she is my wife now for 38 glorious years. Halleluiah! What a wonderful gift from God! I can’t wait to see what awaits us in Heaven.”
